- 1 cup all-purpose flour, heat treated for safety
- 6 tablespoons unsalted butter, softened
- 1/3 cup granulated sugar
- 2 tablespoons light brown sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- Pinch of fine salt
- 2 to 3 tablespoons milk, as needed for dough
- 1 cup white chocolate chips or white melting wafers
- 1 tablespoon coconut oil or neutral oil, for smoother dipping
- For rolling: 2 tablespoons granulated sugar mixed with 1 teaspoon cinnamon
Instructions
- Heat treat the flour by spreading it on a baking sheet and baking at 300°F for 7 to 10 minutes until it reaches 165°F. Let it cool completely.
- Cream the butter and sugars until light and smooth. Add vanilla, cinnamon, and salt. Mix in the cooled flour. Add milk gradually until a soft dough forms.
- Roll dough into 1-inch balls and toss in the cinnamon sugar mixture. Chill for 15 minutes to firm up.
- Melt white chocolate with oil in short bursts in the microwave, stirring until smooth.
- Dip chilled balls in the melted chocolate and place on parchment. Sprinkle with extra cinnamon sugar while still wet.
- Let set at room temperature or refrigerate for 10 minutes. Enjoy or store for later.
