Deliciously Easy Snickerdoodle Truffles

These easy snickerdoodle truffles taste like cookie dough rolled in cinnamon sugar, with a creamy white chocolate shell. No baking required!

Ingredients

  • 1 cup all-purpose flour, heat treated for safety
  • 6 tablespoons unsalted butter, softened
  • 1/3 cup granulated sugar
  • 2 tablespoons light brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • Pinch of fine salt
  • 2 to 3 tablespoons milk, as needed for dough
  • 1 cup white chocolate chips or white melting wafers
  • 1 tablespoon coconut oil or neutral oil, for smoother dipping
  • For rolling: 2 tablespoons granulated sugar mixed with 1 teaspoon cinnamon

Instructions

  1. Heat treat the flour by spreading it on a baking sheet and baking at 300°F for 7 to 10 minutes until it reaches 165°F. Let it cool completely.
  2. Cream the butter and sugars until light and smooth. Add vanilla, cinnamon, and salt. Mix in the cooled flour. Add milk gradually until a soft dough forms.
  3. Roll dough into 1-inch balls and toss in the cinnamon sugar mixture. Chill for 15 minutes to firm up.
  4. Melt white chocolate with oil in short bursts in the microwave, stirring until smooth.
  5. Dip chilled balls in the melted chocolate and place on parchment. Sprinkle with extra cinnamon sugar while still wet.
  6. Let set at room temperature or refrigerate for 10 minutes. Enjoy or store for later.
