- 4 large egg whites, room temperature
- 1 cup granulated sugar
- 1/4 teaspoon cream of tartar
- 1 teaspoon vanilla or peppermint extract
- Green gel food coloring (a few drops)
- Sprinkles for decorating: star confetti, nonpareils, or sanding sugar
- Optional: a pinch of fine salt
Instructions
- Set the oven to 200 F and line baking sheets with parchment.
- In a spotless mixing bowl, beat egg whites on medium speed until foamy. Sprinkle in the cream of tartar and keep mixing until soft peaks form.
- Slowly add the sugar, a tablespoon at a time, mixing on medium-high until glossy and stiff peaks form.
- Mix in vanilla or peppermint extract and green gel food coloring.
- Transfer to a piping bag fitted with a large star tip, and pipe spiral stacks into tree shapes on the parchment.
- Top with sprinkles and bake for 90 to 120 minutes until dry to the touch.
- Turn off the oven and let cool inside with the door slightly cracked for 30 minutes.
- Lift gently with an offset spatula.
Notes
Store in an airtight container at room temperature for up to 2 weeks. Keep away from humidity.
