Easy 30 Minute Rise English Muffin Bread

A soft, quick bread with the texture of English muffins, baked in a loaf for easy slicing and toasting.

Ingredients

  • 41/2 cups flour
  • 2 tsp kosher salt
  • 1/4 tsp baking soda
  • 1/2 cup warm water
  • 2 Tbsp instant yeast
  • 1 Tbsp sugar
  • 13/4 cups warm milk
  • 1/4 cup melted butter
  • Up to 1/3 cup cornmeal for dusting

Instructions

  1. Prepare two bread pans by spraying with non-stick cooking spray, then dusting each with cornmeal.
  2. In a mixing bowl, whisk together the flour, salt, and baking soda. Set aside.
  3. In another bowl, mix together warm water, yeast, and sugar. Let sit until foamy, then add warm milk and melted butter.
  4. Stir the dry mixture into the wet mixture until combined.
  5. Divide the dough between the pans, sprinkle with cornmeal, and cover with plastic wrap to rise for 30 minutes.
  6. Preheat the oven to 400°F. Bake for 22-25 minutes until golden brown.
  7. Remove from the oven and let cool on a rack before slicing.

Notes

This recipe can be adapted using whole wheat flour or seeds for added nutrition. It’s great for meal prep and can be frozen.
