- 1 standard pack Biscoff cookies, crushed into fine crumbs
- 6 to 8 ounces cream cheese, softened to room temperature
- 12 ounces melting chocolate or chocolate chips, milk or dark
- Optional: white chocolate for drizzling, crushed cookies, sprinkles, flaky salt
Instructions
- Crush the cookies using a food processor or by hammering in a zip-top bag until sandy.
- Mix the cookie crumbs with softened cream cheese in a bowl until a thick dough forms.
- Scoop about a tablespoon and roll into balls, placing them on a parchment lined tray.
- Chill the balls in the fridge for 20 to 30 minutes.
- Melt the chocolate in the microwave or double boiler until smooth.
- Dip each truffle into the melted chocolate, tapping off excess chocolate.
- Decorate while wet with crushed cookies, sprinkles, or flaky salt.
- Let the truffles set at room temperature for 30 minutes or chill for 10 before serving.
Notes
Store in an airtight container. They last a week in the fridge and up to 2 months in the freezer.
