Easy Biscoff Truffles

Delicious, no-bake Biscoff truffles made with minimal ingredients, perfect for holiday gifting and parties.

Ingredients

Scale
  • 1 standard pack Biscoff cookies, crushed into fine crumbs
  • 6 to 8 ounces cream cheese, softened to room temperature
  • 12 ounces melting chocolate or chocolate chips, milk or dark
  • Optional: white chocolate for drizzling, crushed cookies, sprinkles, flaky salt

Instructions

  1. Crush the cookies using a food processor or by hammering in a zip-top bag until sandy.
  2. Mix the cookie crumbs with softened cream cheese in a bowl until a thick dough forms.
  3. Scoop about a tablespoon and roll into balls, placing them on a parchment lined tray.
  4. Chill the balls in the fridge for 20 to 30 minutes.
  5. Melt the chocolate in the microwave or double boiler until smooth.
  6. Dip each truffle into the melted chocolate, tapping off excess chocolate.
  7. Decorate while wet with crushed cookies, sprinkles, or flaky salt.
  8. Let the truffles set at room temperature for 30 minutes or chill for 10 before serving.

Notes

Store in an airtight container. They last a week in the fridge and up to 2 months in the freezer.
