- 8 Cassava Flour Tortillas
- 2 Cups Shredded Chicken
- 1/2 Cup Diced Bell Pepper
- 1/3 Cup Diced Red Onion
- 1/4 Cup Mayo
- 3 Tablespoons Lime Juice
- 2 Tablespoons Chopped Cilantro
- 1 Teaspoon Chili Powder
- 1/2 Teaspoon Garlic Powder
- 1/2 Teaspoon Salt
Instructions
- Combine all filling ingredients in a large bowl and mix well.
- Preheat a cast iron or nonstick skillet over medium heat and spray with oil.
- Warm two tortillas in the microwave for 15-20 seconds to make them pliable.
- Fill each tortilla with a spoonful of chicken filling and roll tightly.
- Place taquitos seam side down in the skillet and cook for 5 minutes until golden brown.
- Flip taquitos and cook for another 4-5 minutes until crispy on both sides.
- Serve over a bed of lettuce with guacamole and salsa.
