Easy Gluten-Free Chicken Taquitos

Crispy on the outside and filled with a flavorful chicken mixture, these Gluten-Free Chicken Taquitos are perfect for any occasion.

Ingredients

  • 8 Cassava Flour Tortillas
  • 2 Cups Shredded Chicken
  • 1/2 Cup Diced Bell Pepper
  • 1/3 Cup Diced Red Onion
  • 1/4 Cup Mayo
  • 3 Tablespoons Lime Juice
  • 2 Tablespoons Chopped Cilantro
  • 1 Teaspoon Chili Powder
  • 1/2 Teaspoon Garlic Powder
  • 1/2 Teaspoon Salt

Instructions

  1. Combine all filling ingredients in a large bowl and mix well.
  2. Preheat a cast iron or nonstick skillet over medium heat and spray with oil.
  3. Warm two tortillas in the microwave for 15-20 seconds to make them pliable.
  4. Fill each tortilla with a spoonful of chicken filling and roll tightly.
  5. Place taquitos seam side down in the skillet and cook for 5 minutes until golden brown.
  6. Flip taquitos and cook for another 4-5 minutes until crispy on both sides.
  7. Serve over a bed of lettuce with guacamole and salsa.
