Ingredients

- 3–1/4 cups all-purpose flour
- 2 tsp instant yeast
- 1–1/2 tsp salt
- 1–1/2 cups warm water
Instructions
- In a large mixing bowl, whisk together the flour, yeast, and salt.
- Add the warm water and stir with a wooden spoon until just combined. (It will look shaggy.)
- Cover with plastic wrap and a towel, letting it sit for 4-24 hours in a non-drafty place.
- Preheat your oven to 450°F (230°C) at least 30 minutes before baking.
- If using a Dutch oven, place it in the oven while it heats.
- Turn the dough out onto a well-floured surface and shape it gently into a round.
- Transfer the dough onto parchment paper, then lift the dough (with the parchment) into the hot Dutch oven, put the lid on, and bake for 30 minutes.
- Remove the lid and bake for another 10-15 minutes until the crust is deep golden brown.
- Let the bread cool on a rack for at least 30 minutes before slicing.
Notes
Store the bread at room temperature in a paper bag for up to 2 days or in a sealed plastic bag for up to 4 days. To freeze, slice the loaf and wrap slices in foil; they keep well for up to 3 months.
