Instructions
- Place 3 large eggs in a saucepan and cover with cold water by 1 inch. Bring to a boil, cover, remove from heat, and let sit for 9–10 minutes.
- Transfer eggs to an ice bath and let cool for 5 minutes. Peel under running water.
- Slice each egg in half lengthwise using a clean, sharp knife.
- Prepare toppings: mash avocado, slice scallions and herbs, and set out condiments.
- Arrange egg halves yolk-side up. Add base layers like mayo or yogurt, then creatively add toppings such as kimchi, avocado, smoked salmon, goat cheese, PB&J, and more.
- Serve at room temperature or chill briefly. Garnish with herbs, seeds, or seasoning blends. Enjoy!
Notes
To save time, boil and peel eggs up to 3 days ahead and prep toppings the day before. Assemble just before serving for best texture and appearance.
