Instructions

  1. Place 3 large eggs in a saucepan and cover with cold water by 1 inch. Bring to a boil, cover, remove from heat, and let sit for 9–10 minutes.
  2. Transfer eggs to an ice bath and let cool for 5 minutes. Peel under running water.
  3. Slice each egg in half lengthwise using a clean, sharp knife.
  4. Prepare toppings: mash avocado, slice scallions and herbs, and set out condiments.
  5. Arrange egg halves yolk-side up. Add base layers like mayo or yogurt, then creatively add toppings such as kimchi, avocado, smoked salmon, goat cheese, PB&J, and more.
  6. Serve at room temperature or chill briefly. Garnish with herbs, seeds, or seasoning blends. Enjoy!
