- 4 large egg whites (or 2/3 cup liquid egg whites)
- 1/4 tsp Italian seasoning
- 1/8 tsp garlic powder
- Salt and black pepper, to taste
- 1/4 cup diced red bell peppers
- 2 Tbsp sliced green onion
- 6 medium grape tomatoes, halved
- 1 cup packed baby spinach, chopped
- 2 Tbsp crumbled feta
- Avocado oil cooking spray or olive oil cooking spray
Instructions
- Add egg whites to a mixing bowl and sprinkle in Italian seasoning, garlic powder, salt, and pepper. Whisk well and set aside.
- Spray a non-stick pan with cooking spray and heat over medium heat.
- Add the diced red bell peppers and sliced green onion to the pan and sauté for about 2 minutes.
- Add halved grape tomatoes and sauté for 1 more minute.
- Add chopped baby spinach and sauté until it wilts.
- Reduce heat to medium-low and pour in the egg white mixture.
- Gently lift the edges of the omelette with a spatula to allow the runny egg to cook evenly.
- Sprinkle crumbled feta on top and cover the pan. Cook for 2 to 3 minutes until set.
- Fold the omelette in half and serve warm.
Notes
Serve the omelette warm with extra feta or fresh herbs. Pairs well with whole-grain toast or fresh fruit.
