Egg White Omelette

A healthy and delicious egg white omelette packed with protein and customized with your favorite vegetables.

Ingredients

  • 4 large egg whites (or 2/3 cup liquid egg whites)
  • 1/4 tsp Italian seasoning
  • 1/8 tsp garlic powder
  • Salt and black pepper, to taste
  • 1/4 cup diced red bell peppers
  • 2 Tbsp sliced green onion
  • 6 medium grape tomatoes, halved
  • 1 cup packed baby spinach, chopped
  • 2 Tbsp crumbled feta
  • Avocado oil cooking spray or olive oil cooking spray

Instructions

  1. Add egg whites to a mixing bowl and sprinkle in Italian seasoning, garlic powder, salt, and pepper. Whisk well and set aside.
  2. Spray a non-stick pan with cooking spray and heat over medium heat.
  3. Add the diced red bell peppers and sliced green onion to the pan and sauté for about 2 minutes.
  4. Add halved grape tomatoes and sauté for 1 more minute.
  5. Add chopped baby spinach and sauté until it wilts.
  6. Reduce heat to medium-low and pour in the egg white mixture.
  7. Gently lift the edges of the omelette with a spatula to allow the runny egg to cook evenly.
  8. Sprinkle crumbled feta on top and cover the pan. Cook for 2 to 3 minutes until set.
  9. Fold the omelette in half and serve warm.

Notes

Serve the omelette warm with extra feta or fresh herbs. Pairs well with whole-grain toast or fresh fruit.
