Espresso Brownie Cups with Baileys Buttercream Frosting

Ingredients

  • 1 (18 oz) box brownie mix plus ingredients called for on the box
  • 2 1/2 tsp instant espresso powder
  • 1 1/2 tsp Baileys Irish Cream Liqueur
  • 2 cups powdered sugar
  • 1/2 cup unsalted butter (softened)
  • 3 tsp Baileys Irish Cream Liqueur

Instructions

  1. Preheat your oven to 350°F.
  2. Grease a 12-cup muffin tin with cooking spray or butter.
  3. Prepare the brownie batter according to the instructions on the box.
  4. Stir in the espresso powder and Baileys Irish Cream Liqueur into the brownie batter.
  5. Pour the batter into the muffin tin, filling each cup about 2/3 full.
  6. Bake in the oven for about 25 minutes or until a toothpick inserted comes out clean.
  7. Press a shot glass into the center of each brownie to create a cup shape.
  8. Let the brownie cups cool completely in the muffin tin.
  9. Prepare the frosting by mixing the softened butter and Baileys Irish Cream Liqueur until combined.
  10. Gradually add the powdered sugar, mixing slowly, then beat until light and fluffy.
  11. Pipe the frosting into each cooled brownie cup.
  12. Optionally, top with festive sprinkles.

Notes

Best served at room temperature. Can be paired with coffee or a glass of Baileys for added enjoyment.
