Ingredients

  • 1/2 cup sugar

  • 1/2 cup chopped dried figs
  • 1/2 cup toasted almonds, chopped
  • 1/2 cup heavy cream
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, sugar, baking powder, and salt in a large bowl.
  3. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.
  4. Stir in the chopped figs and toasted almonds.
  5. In a separate bowl, whisk together the cream, egg, and vanilla extract.
  6. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  7. Turn the dough out onto a floured surface and pat into a 1-inch thick circle.
  8. Cut into wedges or use a round cutter to cut out scones.
  9. Place scones on the prepared baking sheet and bake for 20 to 24 minutes, until golden brown.
  10. Allow to cool slightly before serving.

Notes

For a healthier version, consider using less sugar or a sugar substitute, and whole wheat flour for extra fiber.
