Instructions
- In a bowl, whisk the cottage cheese, eggs, milk, and vanilla until combined.
- In another bowl, mix the flour, baking powder, salt, and sweetener.
- Combine wet and dry ingredients, allowing the batter to rest for 5 minutes.
- Preheat a nonstick skillet over medium heat and lightly grease it.
- Pour batter onto the skillet and cook until bubbles appear, then flip and cook until golden brown.
Notes
For a smooth batter, blend the cottage cheese before mixing with the other ingredients. Serve with your favorite toppings like yogurt, berries, or syrup.
