- 1 cup whole wheat pastry flour or all-purpose flour
- 2 teaspoons baking powder
- 3/4 teaspoon cinnamon
- 3/4 teaspoon ginger
- 1/4 teaspoon allspice
- 1/4 teaspoon salt
- 1 egg
- 3 tablespoons molasses
- 1 tablespoon coconut sugar
- 1 teaspoon vanilla extract
- 1 cup non-dairy milk
- 2 tablespoons melted coconut oil or melted butter
Instructions
- In a medium bowl, whisk together the flour, baking powder, cinnamon, ginger, allspice, and salt. Set aside.
- In a separate large bowl, whisk together the egg, molasses, coconut sugar, vanilla extract, and non-dairy milk.
- Add the dry ingredients to the wet ingredients and mix until just combined. Gently stir in melted coconut oil or melted butter.
- Lightly coat a large nonstick skillet with coconut oil or butter over medium heat.
- Drop batter by 1/3 cup onto skillet and spread slightly. Cook until bubbles appear, about 2 minutes.
- Flip and cook until golden brown, about 2 minutes more. Repeat with remaining batter, adjusting heat if necessary.
- Serve topped with butter and/or pure maple syrup.
Notes
These pancakes can be customized with toppings like fresh fruit, powdered sugar, Greek yogurt, nut butter, or chopped nuts.
