Gluten Free Beignets

Delicious light pastries that are soft and fluffy with a slightly crisp exterior, perfect for breakfast, snacks, or dessert.

Ingredients

Scale
  • 250 g gluten-free bread flour
  • 150 g condensed milk
  • 75 ml dairy-free milk
  • 7 g fast-acting yeast
  • 500 ml oil for frying (vegetable oil)
  • 2 tbsp icing/confectioners’ sugar
  • 3 tbsp caster sugar
  • ½ tsp sweet ground cinnamon

Instructions

  1. In a small saucepan, combine 150 g of sugar and 150 ml of dairy-free milk. Stir over low heat until sugar dissolves.
  2. Increase heat slightly and let it simmer gently for 10-15 minutes, stirring often until thickened. Remove from heat and cool.
  3. For shop bought version, measure 150 g of condensed milk directly.
  4. Mix the remaining ingredients together for your beignet dough.
  5. Heat oil in a frying pan or deep fryer and fry dough until golden brown.
  6. Dust with icing sugar and ground cinnamon before serving.

Notes

Best served fresh; can be stored in an airtight container for up to 1 day or frozen for 3 months.
