Garlic Butter Roasted Potatoes

Ingredients

  • 1 lb mixed baby potatoes (rinsed and cleaned)
  • 1/4 cup neutral oil
  • 1/2 tsp salt
  • 1 tbsp onion powder
  • 1 tbsp cajun seasoning
  • 1/2 cup butter
  • 2 tbsp olive oil
  • 1520 cloves garlic (minced)
  • 1/2 tsp paprika
  • 1/4 tsp pepper
  • 1/2 tsp salt
  • 1/2 tsp sugar

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Fill a large pot with water and bring it to a boil.
  3. Cut the rinsed and cleaned baby potatoes in half or quarters.
  4. Add the cut potatoes to the boiling water and cook until fork tender, about 10-15 minutes.
  5. Drain the potatoes and give them a little shake to remove excess water.
  6. Return the drained potatoes to the pot and add the neutral oil, salt, onion powder, and cajun seasoning, tossing to coat.
  7. Prepare a baking tray by coating it with a little oil.
  8. Transfer the seasoned potatoes onto the tray, placing them facing down.
  9. Roast in the preheated oven for 25 minutes, then remove and toss gently.
  10. Return to the oven for another 15 minutes or until golden brown and crispy.
  11. In a small saucepan, melt the butter and stir in the minced garlic, cooking until fragrant.
  12. Once the potatoes are done, drizzle the garlic butter over them and toss gently to combine.
  13. Serve warm, garnished with fresh herbs or a squeeze of lemon juice, if desired.

Notes

For extra flavor, consider adding herbs or cheese during the roasting process.
