Ingredients

- 1 lb mixed baby potatoes (rinsed and cleaned)
- 1/4 cup neutral oil
- 1/2 tsp salt
- 1 tbsp onion powder
- 1 tbsp cajun seasoning
- 1/2 cup butter
- 2 tbsp olive oil
- 15–20 cloves garlic (minced)
- 1/2 tsp paprika
- 1/4 tsp pepper
- 1/2 tsp salt
- 1/2 tsp sugar
Instructions
- Preheat your oven to 400°F (200°C).
- Fill a large pot with water and bring it to a boil.
- Cut the rinsed and cleaned baby potatoes in half or quarters.
- Add the cut potatoes to the boiling water and cook until fork tender, about 10-15 minutes.
- Drain the potatoes and give them a little shake to remove excess water.
- Return the drained potatoes to the pot and add the neutral oil, salt, onion powder, and cajun seasoning, tossing to coat.
- Prepare a baking tray by coating it with a little oil.
- Transfer the seasoned potatoes onto the tray, placing them facing down.
- Roast in the preheated oven for 25 minutes, then remove and toss gently.
- Return to the oven for another 15 minutes or until golden brown and crispy.
- In a small saucepan, melt the butter and stir in the minced garlic, cooking until fragrant.
- Once the potatoes are done, drizzle the garlic butter over them and toss gently to combine.
- Serve warm, garnished with fresh herbs or a squeeze of lemon juice, if desired.
Notes
For extra flavor, consider adding herbs or cheese during the roasting process.
