Ingredients

- 1 inch grated ginger
- 1 inch grated cucumber
- Juice of half a lime
- 6 mint leaves
- 0.5 cup sparkling water
- 0.5 cup diet ginger ale
- Ice
- Lime wheels, ginger, cucumber, or mint for garnish
Instructions
- Grate ginger into a bowl.
- Grate cucumber into the same bowl, ensuring all juice goes in.
- Squeeze lime juice into the ginger and cucumber mixture.
- Muddle the mixture gently.
- Strain the mixture into your glass using a small strainer, pressing to extract as much liquid as possible.
- Clap the mint leaves together in your hands 3 to 4 times to release oils and scent, then add to your glass.
- Add ice and top with diet ginger ale and sparkling water. Stir gently.
- Garnish with lime wheels, ginger, cucumber, or mint and serve.
Notes
For a low-carb option, use all sparkling water and a zero-calorie sweetener if desired.
