Ginger Scones

Warm, spiced ginger scones that are easy to make and pair well with tea or coffee.

Ingredients

  • 2 cups all-purpose flour
  • 1/3 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup crystallized ginger, chopped
  • 1/2 cup heavy cream
  • 1 egg

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Whisk together the flour, sugar, baking powder, baking soda, salt, ground ginger, cinnamon, and nutmeg.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the chopped crystallized ginger.
  5. Whisk together the cream and egg in another bowl.
  6. Add the wet ingredients to the dry ingredients and mix just until combined.
  7. Turn the dough onto a floured surface and knead gently until it comes together.
  8. Pat it into a circle about 1 inch thick.
  9. Cut into 8 wedges and place on a baking sheet.
  10. Bake for 18 to 22 minutes, until golden brown.
  11. Let cool for a few minutes before serving.

Notes

Serve warm with a spread of low-fat cream cheese or Greek yogurt mixed with honey for a healthier choice. Ideal for meal prep!
