- 2 cups all-purpose flour
- 1/3 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup crystallized ginger, chopped
- 1/2 cup heavy cream
- 1 egg
Instructions
- Preheat your oven to 400°F (200°C).
- Whisk together the flour, sugar, baking powder, baking soda, salt, ground ginger, cinnamon, and nutmeg.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in the chopped crystallized ginger.
- Whisk together the cream and egg in another bowl.
- Add the wet ingredients to the dry ingredients and mix just until combined.
- Turn the dough onto a floured surface and knead gently until it comes together.
- Pat it into a circle about 1 inch thick.
- Cut into 8 wedges and place on a baking sheet.
- Bake for 18 to 22 minutes, until golden brown.
- Let cool for a few minutes before serving.
Notes
Serve warm with a spread of low-fat cream cheese or Greek yogurt mixed with honey for a healthier choice. Ideal for meal prep!
