- 1 cup unsalted butter, softened
- 3/4 cup packed brown sugar
- 1/3 cup granulated sugar
- 1 large egg, room temperature
- 1/3 cup unsulphured molasses
- 2 teaspoons pure vanilla extract
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon fine salt
- 2 teaspoons ground ginger
- 1 1/2 teaspoons ground cinnamon
- 1/4 teaspoon ground cloves
- Optional: pinch of nutmeg or black pepper
Instructions
- Mix the butter, brown sugar, and granulated sugar together until light and fluffy. Add the egg, vanilla, and molasses, and mix until smooth.
- Sift in the flour, baking soda, baking powder, salt, ginger, cinnamon, and cloves. Mix until combined.
- Chill the dough for 20 to 30 minutes.
- Scoop and roll the dough into balls, placing them on a parchment-lined baking sheet.
- Bake at 350°F (175°C) for 8 to 12 minutes, depending on the size of the cookies.
- Cool the cookies on a rack and then fill with your choice of filling.
Notes
For a sumptuous filling, consider cream cheese filling, marshmallow buttercream, or vanilla bean buttercream. Chill filled cookies for better texture.
