- 2 cups Gluten-Free Measure for Measure Flour
- 1 cup butter, softened
- 1/2 cup sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup fruit jam (preferably apricot or raspberry)
- 1 cup powdered sugar
- 1–2 tablespoons milk (for icing)
- 1/2 cup sliced almonds
Instructions
- Preheat the oven to 375°F (190°C). Grease two 10″ x 3″ loaf pans.
- Cream together the softened butter and sugar until light and fluffy.
- Beat in the Gluten-Free Measure for Measure Flour, salt, and vanilla extract until the dough comes together.
- Divide the dough into two portions. Press each portion into the prepared loaf pans, spreading it out evenly.
- Spread a layer of fruit jam over the top of each loaf.
- Bake in the preheated oven for 1 hour to 1 hour 10 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
- Let the loaves cool in the pans for a few minutes, then transfer to a wire rack to cool completely.
- Mix powdered sugar with milk until smooth for icing. Drizzle over the cooled loaves and sprinkle with sliced almonds.
- Slice and serve. Enjoy your gluten-free almond puff loaf!
Notes
For a lighter option, skip the icing and reduce the jam layer. Store in an airtight container for up to 3 days.
