Gluten-Free Cinnamon Coffee Cake

Ingredients

  • 1/2 cup salted butter, softened
  • 2/3 cup applesauce
  • 2 eggs
  • 1 cup white sugar
  • 2 tsp vanilla extract
  • 1 cup almond flour
  • 1 1/4 cup oat flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp salted butter, melted
  • 1 tbsp oat flour
  • 2 tbsp white sugar
  • 1/2 tbsp cinnamon
  • 1/4 cup salted butter, slightly softened
  • 1/4 cup light brown sugar
  • 1/4 cup almond flour
  • 1/2 cup oat flour
  • 2 tsp cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the softened butter, applesauce, eggs, sugar, and vanilla extract. Mix until smooth.
  3. Add the almond flour, oat flour, baking powder, and salt. Stir until smooth.
  4. In another bowl, mix the melted butter, oat flour, white sugar, and cinnamon to form cinnamon-sugar filling.
  5. In a separate bowl, combine room temperature butter, brown sugar, almond flour, oat flour, and cinnamon to create topping crumbs.
  6. Grease or line an 8×8 baking dish. Pour half the batter in, spreading evenly.
  7. Sprinkle half the cinnamon-sugar filling on the batter and swirl it using a knife.
  8. Pour the remaining batter on top and repeat the filling process.
  9. Bake for 25 minutes, then sprinkle topping over the cake and bake for an additional 18 minutes.
  10. Allow to cool completely before cutting into squares.

Notes

Serve warm with vanilla ice cream or whipped cream for a delightful treat.
