Gluten Free Garlic Pizza Breadsticks

  • 1 recipe gluten free pizza dough
  • 4 cloves garlic (peeled and minced)
  • 1/2 teaspoon kosher salt
  • 4 tablespoons unsalted butter (melted)
  • 1 ounce finely grated Parmigiano-Reggiano cheese
  • 8 ounces part-skim mozzarella cheese (grated)

Instructions

  1. Make the pizza dough according to your favorite recipe instructions.
  2. Let the dough rise in a warm spot for about 1 to 2 hours.
  3. Refrigerate the dough for about 30 minutes or longer for firmer handling.
  4. Preheat the oven to 400°F (200°C) with a pizza stone or overturned baking sheet inside.
  5. Dust a surface with gluten-free flour, place the dough, and roll it out into a 12×15 inch oval.
  6. Transfer the dough onto parchment paper.
  7. Make a paste by pressing the minced garlic and kosher salt together.
  8. Add the garlic paste to the melted butter and mix well.
  9. Brush the garlic butter mixture over the dough, then sprinkle on the cheeses.
  10. Transfer the dough on parchment to the hot pizza stone and bake for about 10 minutes until golden brown.
  11. Let cool slightly, slice into sticks, and serve warm.
