- 1 recipe gluten free pizza dough
- 4 cloves garlic (peeled and minced)
- 1/2 teaspoon kosher salt
- 4 tablespoons unsalted butter (melted)
- 1 ounce finely grated Parmigiano-Reggiano cheese
- 8 ounces part-skim mozzarella cheese (grated)
Instructions
- Make the pizza dough according to your favorite recipe instructions.
- Let the dough rise in a warm spot for about 1 to 2 hours.
- Refrigerate the dough for about 30 minutes or longer for firmer handling.
- Preheat the oven to 400°F (200°C) with a pizza stone or overturned baking sheet inside.
- Dust a surface with gluten-free flour, place the dough, and roll it out into a 12×15 inch oval.
- Transfer the dough onto parchment paper.
- Make a paste by pressing the minced garlic and kosher salt together.
- Add the garlic paste to the melted butter and mix well.
- Brush the garlic butter mixture over the dough, then sprinkle on the cheeses.
- Transfer the dough on parchment to the hot pizza stone and bake for about 10 minutes until golden brown.
- Let cool slightly, slice into sticks, and serve warm.
