Gluten Free Pizza Rolls

  • 1 cup all-purpose gluten-free flour blend
  • 1/2 teaspoon xanthan gum
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 3/4 cup nonfat Greek-style plain yogurt
  • 2 tablespoons lukewarm water
  • 4 ounces low-moisture mozzarella cheese, diced
  • 1/2 cup Simple Tomato Sauce (or your favorite tomato sauce)
  • Heavy whipping cream (for brushing)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix the gluten-free flour, xanthan gum, baking powder, and salt. Add yogurt and water, stirring until a dough forms.
  3. Turn the dough onto a floured surface and roll it out to a 1/4 inch thick rectangle.
  4. Cut the dough into 3-inch squares. Place mozzarella and a bit of sauce in the center of each square.
  5. Fold each square into a triangle, sealing the edges. Place them on the prepared baking sheet and brush with cream.
  6. Bake for 15-20 minutes until golden brown and puffed.
