- 1 cup all-purpose gluten-free flour blend
- 1/2 teaspoon xanthan gum
- 1 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 3/4 cup nonfat Greek-style plain yogurt
- 2 tablespoons lukewarm water
- 4 ounces low-moisture mozzarella cheese, diced
- 1/2 cup Simple Tomato Sauce (or your favorite tomato sauce)
- Heavy whipping cream (for brushing)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, mix the gluten-free flour, xanthan gum, baking powder, and salt. Add yogurt and water, stirring until a dough forms.
- Turn the dough onto a floured surface and roll it out to a 1/4 inch thick rectangle.
- Cut the dough into 3-inch squares. Place mozzarella and a bit of sauce in the center of each square.
- Fold each square into a triangle, sealing the edges. Place them on the prepared baking sheet and brush with cream.
- Bake for 15-20 minutes until golden brown and puffed.
