Gluten-Free Roasted Chestnut Cookies

Ingredients

  • ¾ cup ground roasted chestnuts
  • 1 cup gluten-free flour blend
  • ½ cup cane sugar
  • ½ cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat your oven to 350º F.
  2. In a grinder or food processor, grind the roasted chestnuts to medium texture.
  3. Add the ground chestnuts to a large mixing bowl.
  4. In another bowl, combine the gluten-free flour blend and cane sugar, whisking until well mixed.
  5. In a small bowl, whisk together the melted unsalted butter, pure vanilla extract, and large egg until smooth.
  6. Pour the wet mixture into the dry ingredients and mix until combined.
  7. Drop dollops of dough onto a parchment paper-lined cookie sheet, leaving space between each cookie.
  8. Bake for 8-10 minutes until the cookies are set.
  9. Remove from the oven and let cool on a cooling rack.
  10. Optionally, dip the bottom of each cookie into melted chocolate.

Notes

Store cookies in an airtight container for up to a week at room temperature or freeze for up to three months.
