Gluten Free Taco Casserole

A delightful gluten-free taco casserole featuring layers of seasoned meat, beans, corn, cheese, and crunchy tortilla chips, perfect for feeding a crowd.

Ingredients

  • 1 pound ground beef or turkey
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 1 cup diced tomatoes
  • 2 cups gluten-free tortilla chips
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup salsa
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • Optional toppings: sour cream, avocado, cilantro

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the ground beef or turkey over medium heat until browned. Drain excess fat.
  3. Add diced onions and bell peppers to the skillet and cook until softened.
  4. Stir in the taco seasoning, black beans, corn, and diced tomatoes. Mix well and let it simmer for a few minutes.
  5. In a 9×13 inch baking dish, layer half of the tortilla chips at the bottom.
  6. Spread the meat mixture over the chips, then layer with salsa and half of the cheese.
  7. Add the remaining tortilla chips on top, followed by the rest of the meat mixture and cheese.
  8. Bake in the preheated oven for 25-30 minutes, until the cheese is melted and bubbly.
  9. Let cool for a few minutes before serving, and top with optional toppings like sour cream, avocado, and cilantro.
