- 1 pound ground beef or turkey
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 packet taco seasoning
- 1 cup diced tomatoes
- 2 cups gluten-free tortilla chips
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup salsa
- 1 cup diced bell peppers
- 1 cup diced onions
- Optional toppings: sour cream, avocado, cilantro
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, cook the ground beef or turkey over medium heat until browned. Drain excess fat.
- Add diced onions and bell peppers to the skillet and cook until softened.
- Stir in the taco seasoning, black beans, corn, and diced tomatoes. Mix well and let it simmer for a few minutes.
- In a 9×13 inch baking dish, layer half of the tortilla chips at the bottom.
- Spread the meat mixture over the chips, then layer with salsa and half of the cheese.
- Add the remaining tortilla chips on top, followed by the rest of the meat mixture and cheese.
- Bake in the preheated oven for 25-30 minutes, until the cheese is melted and bubbly.
- Let cool for a few minutes before serving, and top with optional toppings like sour cream, avocado, and cilantro.
Notes
