- 2 eggs
- 1/2 cup unsalted butter, room temperature
- 1 cup sugar
- 1 tsp dried lavender buds
- 1 3/4 cups flour
- 2 tsp baking powder
- 1/4 tsp salt
- 1 cup confectioners sugar
- 1/2 tsp lavender extract
- 2–3 Tbsp water
Instructions
- Preheat the oven to 375°F. Prepare two baking sheets by greasing them or lining with parchment paper.
- In a blender, combine the eggs, butter, sugar, and dried lavender buds. Blend on low until well mixed.
- In a large bowl, sift together the flour, baking powder, and salt.
- Pour the wet mixture from the blender into the bowl of dry ingredients. Stir until well combined.
- Using a tablespoon, drop the dough onto the prepared baking sheets, leaving space between each cookie.
- Bake for about 10 to 15 minutes, or until golden brown edges appear.
- Remove from oven and cool on wire racks.
- For icing, mix confectioners sugar, lavender extract, and water in a small bowl until smooth.
- Spread icing on cooled cookies, optionally garnishing with dried lavender flowers.
Notes
Store in an airtight container at room temperature for up to a week. Cookies can be frozen for up to three months.
