Grandma’s Lavender Cookies

Ingredients

  • 2 eggs
  • 1/2 cup unsalted butter, room temperature
  • 1 cup sugar
  • 1 tsp dried lavender buds
  • 1 3/4 cups flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup confectioners sugar
  • 1/2 tsp lavender extract
  • 23 Tbsp water

Instructions

  1. Preheat the oven to 375°F. Prepare two baking sheets by greasing them or lining with parchment paper.
  2. In a blender, combine the eggs, butter, sugar, and dried lavender buds. Blend on low until well mixed.
  3. In a large bowl, sift together the flour, baking powder, and salt.
  4. Pour the wet mixture from the blender into the bowl of dry ingredients. Stir until well combined.
  5. Using a tablespoon, drop the dough onto the prepared baking sheets, leaving space between each cookie.
  6. Bake for about 10 to 15 minutes, or until golden brown edges appear.
  7. Remove from oven and cool on wire racks.
  8. For icing, mix confectioners sugar, lavender extract, and water in a small bowl until smooth.
  9. Spread icing on cooled cookies, optionally garnishing with dried lavender flowers.

Notes

Store in an airtight container at room temperature for up to a week. Cookies can be frozen for up to three months.
