- 1 Tbsp lemon juice
- 1 cup milk (minus 1 Tbsp)
- 1–1/2 cups whole wheat flour
- 1/2 cup all-purpose flour
- 1/2 tsp baking soda
- 1–1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup sugar
- 1 egg, room temperature
- 1/3 cup dark molasses
Instructions
- Preheat oven to 350°F (175°C).
- Combine lemon juice and enough milk to make 1 cup; set aside.
- In a mixing bowl, whisk together whole wheat flour, all-purpose flour, baking soda, baking powder, and salt.
- Add the milk mixture, sugar, egg, and molasses; whisk until just combined.
- Pour the mixture into a greased and floured loaf pan.
- Bake at 350°F for 50-60 minutes, or until a toothpick comes out clean.
- Let cool in the pan for 15 minutes, then transfer to a cooling rack to cool completely.
Notes
Serve warm with butter, nut butter, or ricotta. Portion control: slice into 10-12 pieces.
