- 2 lbs yellow potatoes, cut into large chunks
- 1/2 medium yellow onion, cut into chunks
- 5 cloves garlic, minced
- 2 1/2 tsp dried oregano
- 1 tsp dried basil
- 1 tsp dried rosemary, crushed
- Salt and freshly ground black pepper to taste
- 3 lbs bone-in, skin-on chicken thighs, trimmed
- 1 1/2 Tbsp olive oil
- 1/2 cup chicken broth
- 3 1/2 Tbsp fresh lemon juice
- 2 tsp lemon zest, divided
- 3 Tbsp fresh parsley
Instructions
- Prepare the Slow Cooker: Place the cut potatoes and chunks of onion in an even layer at the bottom of the slow cooker.
- Add Chicken Broth: Pour the chicken broth over the potatoes and onions.
- Season the Veggies: Sprinkle half of the minced garlic, oregano, basil, and rosemary on top. Then, add salt and pepper to taste.
- Sear the Chicken: In a large pot, heat the olive oil over medium-high heat. Once hot, add the chicken thighs skin side down. Cook for 5-7 minutes until golden brown.
- Transfer Chicken: Move the seared chicken thighs to the slow cooker on top of the potato mixture.
- Add Lemon Juice and Herbs: Slowly pour lemon juice over the chicken, then sprinkle the remaining garlic, oregano, rosemary, and basil on top. Add 1 teaspoon of lemon zest and save the rest for later.
- Cook: Cover and cook on low for 5 1/2 to 7 hours until the chicken is tender and flavors blend beautifully.
- Serve: Taste and adjust seasoning if needed. Serve warm, spooning flavorful juices over each serving, garnished with fresh parsley and remaining lemon zest.
Notes
Pair with a Greek salad or warm crusty bread for a complete meal. Store leftovers in an airtight container in the fridge for up to 3-4 days or freeze for up to 3 months.
