Grilled Chicken Margherita

A delicious grilled chicken dish topped with fresh mozzarella, vibrant basil, and sweet tomatoes, perfect for warm evenings and special occasions.

Ingredients

  • 4 boneless skinless chicken breasts (8 oz each, pounded to 1/2 inch thickness)
  • 1/4 cup white balsamic vinegar
  • 1/4 cup olive oil
  • 1 tsp minced garlic
  • 3/4 tsp dried oregano
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 6 oz fresh mozzarella (cut into 8 slices)
  • 1 cup grape tomatoes (halved or sliced)
  • 1 1/2 cup fresh basil leaves (packed)
  • 1/4 cup finely shredded parmesan cheese
  • 2 Tbsp pine nuts
  • Salt to taste

Instructions

  1. In a mixing bowl, whisk together the white balsamic vinegar, olive oil, minced garlic, oregano, salt, and black pepper to create the marinade.
  2. Place the chicken in a gallon-size resealable bag and pour the balsamic mixture over it. Seal the bag and massage the marinade into the chicken. Marinate in the fridge for 1 to 6 hours.
  3. Prepare the pesto by adding basil leaves, parmesan cheese, and pine nuts into a food processor. Pulse until finely minced, then drizzle in extra virgin olive oil while pulsing. Add salt to taste and cover.
  4. Preheat the grill to medium-high heat (around 425°F). Clean the grill grates.
  5. Grill the marinated chicken for 5 to 6 minutes, then turn and grill for another 2 minutes. Add 2 slices of mozzarella on each chicken breast and grill until cooked through (165°F in the center), about another 3 to 4 minutes.
  6. Once cooked, top each chicken breast with pesto and sliced tomatoes before serving.

Notes

Marinate the chicken the night before for enhanced flavor. Serve with sides like green salad or garlic bread.
