Ground Beef Enchilada Bake

Ingredients

  • 1 lb ground beef
  • 1 cup enchilada sauce
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup cauliflower rice (optional for low-carb)
  • Sour cream and avocado for serving (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, brown the ground beef over medium heat.
  3. Add chopped onion and bell pepper, and cook until softened.
  4. Stir in garlic powder, cumin, salt, and pepper; cook for an additional 2 minutes.
  5. In a 9×13 inch baking dish, layer half of the meat mixture, followed by half of the enchilada sauce, then half of the cheese.
  6. If using cauliflower rice, add it in the next layer. Repeat the layers with the remaining meat, enchilada sauce, and cheese.
  7. Bake in the preheated oven for 20-30 minutes, or until the cheese is melted and bubbly.
  8. Serve hot with sour cream and avocado on top if desired.
