Halloween Cheesecake Brownies

Ingredients

  • 3 large eggs
  • 6 Tbsp reduced-fat butter, room temperature
  • 1 cup sugar
  • 3 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 cup baking cocoa
  • 1/2 cup dark chocolate chips
  • 8 oz reduced-fat cream cheese
  • 1 1/2 tsp orange food coloring

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Coat a 9×9-inch square baking dish with cooking spray.
  3. Separate two eggs, adding each egg white to a separate bowl and discarding the yolks.
  4. In a medium bowl, beat the butter and 3/4 cup of sugar together until crumbly.
  5. Add one whole egg, the two egg whites, and vanilla extract, and beat until fully combined.
  6. In a small bowl, stir together the flour and baking cocoa.
  7. Gradually add the dry ingredients to the wet mixture, beating until smooth.
  8. Fold in the dark chocolate chips.
  9. Pour the batter into the prepared baking dish and spread evenly.
  10. In a separate bowl, beat the cream cheese, remaining 1/4 cup sugar, and orange food coloring until combined.
  11. Drop the cream cheese mixture on top of the brownie batter in tablespoonfuls.
  12. Cut through the batter with a knife to create a swirled pattern.
  13. Bake for 25 to 30 minutes, or until the edges are set.
  14. Cool completely on a wire rack before serving.

Notes

These brownies can be stored in an airtight container at room temperature for up to 3 days, or in the refrigerator for about a week. They can also be frozen for up to 3 months.
