- 1 cup rolled oats
- 1 cup grated carrots
- 1/2 cup almond flour
- 1/4 cup honey or maple syrup
- 1/4 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/4 cup chopped walnuts or pecans (optional)
- 1/4 cup raisins or cranberries (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine rolled oats, grated carrots, almond flour, honey (or maple syrup), applesauce, and vanilla extract. Mix well.
- In a separate bowl, whisk together baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients. Mix until everything is fully combined. If you want, fold in walnuts and raisins for added flavor.
- Scoop tablespoon-sized amounts of dough onto the prepared baking sheet. Leave space between each cookie.
- Bake for 10-12 minutes or until the cookies are lightly golden.
- Allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Storage: Store in an airtight container for up to one week or freeze for up to three months. Can be served warm or at room temperature.
