Healthy Carrot Cake Oatmeal Cookies

Ingredients

  • 1 cup rolled oats
  • 1 cup grated carrots
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup chopped walnuts or pecans (optional)
  • 1/4 cup raisins or cranberries (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine rolled oats, grated carrots, almond flour, honey (or maple syrup), applesauce, and vanilla extract. Mix well.
  3. In a separate bowl, whisk together baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients. Mix until everything is fully combined. If you want, fold in walnuts and raisins for added flavor.
  5. Scoop tablespoon-sized amounts of dough onto the prepared baking sheet. Leave space between each cookie.
  6. Bake for 10-12 minutes or until the cookies are lightly golden.
  7. Allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Storage: Store in an airtight container for up to one week or freeze for up to three months. Can be served warm or at room temperature.
