Healthy Vegan Chickpea Nuggets

Crispy and flavorful vegan chickpea nuggets packed with protein, perfect for snacks or meals.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1/2 cup breadcrumbs
  • 1/4 cup nutritional yeast
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons ground flaxseed mixed with 6 tablespoons water (flax egg)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil spray

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mash the chickpeas with a fork or potato masher until mostly smooth.
  3. Add breadcrumbs, nutritional yeast, parsley, flax egg, garlic powder, onion powder, salt, and pepper. Mix until combined.
  4. Shape the mixture into small nugget-sized pieces and place them on the prepared baking sheet.
  5. Spray the nuggets lightly with olive oil spray.
  6. Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
  7. Serve warm with your favorite dipping sauce.

Notes

These nuggets can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months.
