Ingredients

- 1 can chickpeas, drained and rinsed
- 1/2 cup breadcrumbs
- 1/4 cup nutritional yeast
- 1/4 cup chopped fresh parsley
- 2 tablespoons ground flaxseed mixed with 6 tablespoons water (flax egg)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Olive oil spray
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, mash the chickpeas with a fork or potato masher until mostly smooth.
- Add breadcrumbs, nutritional yeast, parsley, flax egg, garlic powder, onion powder, salt, and pepper. Mix until combined.
- Shape the mixture into small nugget-sized pieces and place them on the prepared baking sheet.
- Spray the nuggets lightly with olive oil spray.
- Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
- Serve warm with your favorite dipping sauce.
Notes
These nuggets can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months.
