High Protein Cottage Cheese Pasta

A delicious and nutritious dish that blends cottage cheese and Greek yogurt with Parmesan and tomato sauce, packed with protein.

Ingredients

  • 1 cup cottage cheese
  • 1 cup Greek yogurt
  • 1 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 cup tomato sauce
  • 1 cup water
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt

Instructions

  1. Heat a medium-sized pan over medium heat.
  2. Add the olive oil to the pan and allow it to warm for approximately 30 seconds.
  3. Pour the tomato sauce into the pan, stirring gently to combine with the oil.
  4. Add the water and stir to slightly thin the tomato sauce.
  5. Reduce heat to low and allow the sauce to simmer for 5 minutes, stirring occasionally.
  6. While the sauce simmers, place cottage cheese, Greek yogurt, and Parmesan cheese into a blender or food processor.
  7. Add garlic powder, dried basil, dried oregano, ground black pepper, and salt to the blender with the cheese and yogurt.
  8. Blend the ingredients until the mixture is completely smooth and creamy.
  9. Slowly pour the blended cheese mixture into the pan with the tomato sauce.
  10. Gently stir to fully integrate the creamy mixture with the tomato base.
  11. Let the sauce cook for an additional 5 minutes, stirring occasionally to prevent sticking.
  12. Mix in the lemon juice until it is well incorporated.
  13. Taste and adjust seasoning with additional salt or pepper as needed.
  14. Allow the sauce to simmer for 2 to 3 minutes more to ensure it is thoroughly heated.
  15. Remove from heat and serve the sauce over cooked pasta of your choice.

Notes

For extra flavor, top with fresh basil and additional Parmesan cheese before serving.
