Ingredients

- 2/3 cup (80g) powdered sugar
- 1/3 cup (46g) cornstarch
- 1 cup (235ml) cold water, divided
- 2 1/2 Tbsp (24g) unflavored gelatin powder
- 2/3 cup (155ml) light corn syrup
- 2 cups (400g) granulated sugar
- 1/4 tsp salt
- 2 tsp vanilla extract
Instructions
- In a medium mixing bowl, whisk together the powdered sugar and cornstarch. Set aside.
- Line a 13 by 9-inch baking dish with aluminum foil and spray with non-stick cooking spray.
- In the bowl of your electric stand mixer, add 1/2 cup of cold water. Sprinkle the unflavored gelatin over the water and let it sit for about 15 minutes.
- In a saucepan, combine the remaining water and light corn syrup. Add the granulated sugar and salt. Heat over medium-high until it reaches 240°F (about 6-8 minutes).
- Slowly pour the hot sugar mixture into the gelatin mixture while whisking on low speed.
- Gradually increase mixer speed to high, whipping until light and fluffy (5-12 minutes).
- Add vanilla extract and mix for another 15 seconds.
- Scrape the marshmallow mixture into the prepared baking dish and spread evenly.
- Sift a layer of powdered sugar on top.
- Cover the dish with plastic wrap and let set for 12 hours at room temperature.
- Invert marshmallows onto a dusted cutting board and cut into desired sizes.
- Toss cut pieces in remaining powdered sugar to coat.
- Store in an airtight container for up to 2 weeks.

You can experiment with different flavors and colors by adding extracts or food coloring.
