Ingredients

  • 11/3 cups all-purpose flour
  • 2/3 cup yellow cornmeal
  • 11/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 1 cup buttermilk
  • 1/2 cup sugar
  • 1/4 cup melted butter, cooled
  • 1/4 cup canola oil
  • 1/4 cup honey
  • 2 eggs, room temperature

Instructions

  1. Preheat oven to 375°F. Spray a 9×9 or 8×8 pan or a cast iron skillet with non-stick spray.
  2. In a large bowl, whisk together the flour, cornmeal, baking powder, baking soda, and salt.
  3. In a smaller bowl, whisk the buttermilk, sugar, melted butter, oil, honey, and eggs until well combined.
  4. Stir the wet ingredients into the dry ingredients until just combined.
  5. Pour the batter into the prepared pan.
  6. Bake at 375°F for 27-32 minutes until a toothpick inserted into the middle comes out clean or with a few moist crumbs.
  7. Let cool for 5-10 minutes, then slice and serve.

Notes

Serve warm with a pat of butter or a drizzle of honey. For a healthy twist, spread Greek yogurt mixed with lemon zest.
