Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and trim the green beans and prepare the carrots.
  3. In a small bowl, whisk together olive oil, honey, balsamic vinegar, garlic, thyme, salt, and pepper until combined.
  4. In a large bowl, toss the carrots and green beans with the honey glaze to coat evenly.
  5. Spread the vegetables in a single layer on a baking sheet.
  6. Roast for 20-25 minutes until tender-crisp, checking around 20 minutes.
  7. Broil for an additional 1-2 minutes for caramelization, watching closely to prevent burning.
  8. Let rest for a minute before serving and garnish if desired.

Notes

For roasting, avoid overcrowding the baking sheet to ensure even cooking. Leftovers can be stored for 2-3 days in the refrigerator.
