Icebox Cookie Cheesecake

A delightful no-bake cheesecake with creamy filling and a crunchy chocolate wafer crust, perfect for any occasion.

Ingredients

  • 1 1/4 cups chocolate wafer crumbs
  • 4 tablespoons butter, melted
  • 2 cups heavy whipping cream, divided
  • 3 packages (8 ounces each) cream cheese, softened
  • 1 cup sugar
  • 1 package (14.3 ounces) Oreo cookies, quartered
  • 4 ounces semisweet chocolate, chopped
  • 1/2 teaspoon vanilla extract
  • Optional: Whipped cream and chopped Oreo cookies for serving

Instructions

  1. In a mixing bowl, combine chocolate wafer crumbs and melted butter. Press into the bottom of a springform pan and freeze to set.
  2. Whip 1 1/2 cups of heavy whipping cream until stiff peaks form; refrigerate.
  3. Beat softened cream cheese until smooth, add sugar, and mix well. Fold in quartered Oreo cookies and then the whipped cream.
  4. Spread the cream filling into the crust and smooth the top.
  5. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
  6. Melt semisweet chocolate in a saucepan, cool slightly, then whisk in 1/2 cup of heavy cream and vanilla extract.
  7. Loosen the cheesecake from the pan and pour the chocolate glaze over the top.
  8. Top with whipped cream and chopped Oreos if desired, slice, and serve.
