- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup cold unsalted butter, cubed
- 1/2 cup raisins or currants
- 1/2 cup Irish cream liqueur
- 1 large egg
- 1 teaspoon vanilla extract
- 1 egg (for egg wash)
- Sugar for topping (optional)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in the raisins or currants.
- In a separate bowl, mix the Irish cream, egg, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Turn the dough onto a floured surface and knead gently. Pat into a circle about 1 inch thick.
- Cut into 8 wedges and place on the prepared baking sheet.
- Brush the tops with beaten egg and sprinkle with sugar if desired.
- Bake for 15 to 18 minutes or until golden.
- Allow cooling slightly before serving.
Notes
For a healthier version, reduce sugar and try part-skim milk. These scones freeze well; wrap individually for easy reheating.
