- 4 boneless skinless chicken breasts or 6 chicken thighs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning or dried oregano
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 cup sun dried tomatoes, sliced
- 3/4 cup chicken broth
- 3/4 cup heavy cream
- 1/2 cup finely grated Parmesan
- 1 tablespoon butter
- Pinch of red pepper flakes
- Fresh basil or parsley for garnish
Instructions
- Pat the chicken dry and season both sides with salt, pepper, and Italian seasoning.
- Heat olive oil in a large skillet over medium heat. Sear the chicken for 4 to 6 minutes per side until golden, then remove to a plate.
- In the same pan, add butter, then the garlic. Cook for 30 seconds until fragrant. Stir in sun dried tomatoes.
- Pour in the chicken broth, scraping up browned bits. Simmer for 2 minutes to reduce slightly.
- Lower heat and stir in the heavy cream. Bring to a gentle simmer, then add Parmesan and red pepper flakes, stirring until smooth.
- Return the chicken and any accumulated juices to the pan. Simmer for 5 to 8 minutes until the chicken is cooked through and the sauce thickens.
- Turn off the heat and garnish with fresh basil. Adjust salt and pepper to taste.
Notes
Serve with pasta, rice, crusty bread, or roasted vegetables for a complete meal.
