- 1/2 cup unsalted butter
- 1 cup brown sugar, packed
- 3/4 cup creamy peanut butter
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup gluten-free flour blend
- 1/2 teaspoon baking powder
- Pinch of salt
- 1/2 cup chocolate chips (optional)
Instructions
- Melt the butter in a bowl and mix in brown sugar until glossy.
- Add peanut butter, eggs, and vanilla; mix well.
- In a separate bowl, whisk together gluten-free flour, baking powder, and salt.
- Gently fold the dry ingredients into the wet mixture.
- If desired, add chocolate chips and mix.
- Spread the mixture into a greased 8×8 inch baking pan.
- Bake at 350°F for about 25 minutes or until the edges are set and a toothpick inserted comes out with a few moist crumbs.
- Let cool before cutting into squares.
Notes
Be careful not to overbake; the blondies will firm up as they cool to avoid a crumbly texture.
