Ingredients

  • 1 cup brown sugar, packed
  • 3/4 cup creamy peanut butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup gluten-free flour blend
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Melt the butter in a bowl and mix in brown sugar until glossy.
  2. Add peanut butter, eggs, and vanilla; mix well.
  3. In a separate bowl, whisk together gluten-free flour, baking powder, and salt.
  4. Gently fold the dry ingredients into the wet mixture.
  5. If desired, add chocolate chips and mix.
  6. Spread the mixture into a greased 8×8 inch baking pan.
  7. Bake at 350°F for about 25 minutes or until the edges are set and a toothpick inserted comes out with a few moist crumbs.
  8. Let cool before cutting into squares.

Notes

Be careful not to overbake; the blondies will firm up as they cool to avoid a crumbly texture.
