Jalapeño Cheddar Cottage Cheese Pull-Apart Bread

Ingredients

  • 3 cups all-purpose flour (about 360 g), plus a little for dusting
  • 2 1/4 teaspoons instant or active dry yeast
  • 1 cup small curd cottage cheese, room temperature
  • 1/2 cup warm water or milk (about 105 to 110°F)
  • 2 tablespoons olive oil or melted butter
  • 2 tablespoons honey or sugar
  • 1 to 1 1/4 teaspoons fine salt
  • 1 1/2 cups shredded sharp cheddar, divided
  • 2 to 3 fresh jalapeños, finely chopped
  • 1 teaspoon garlic powder
  • 1 egg beaten with 1 tablespoon water (optional for egg wash)
  • Optional extras: sliced scallions, pickled jalapeño rings, or a pinch of paprika

Instructions

  1. Warm water or milk to about 105 to 110°F. Whisk in honey and yeast; let sit for 5 minutes until foamy.
  2. In a large bowl, stir together cottage cheese, oil or melted butter, salt, and yeast mixture. Gradually add flour, mixing until a soft, slightly sticky dough forms.
  3. Knead dough for 5 to 7 minutes, or use a stand mixer for 4 to 5 minutes. Place in an oiled bowl, cover, and let rise until doubled (about 60 to 75 minutes).
  4. Mix melted butter with garlic powder. Combine jalapeños and 1 cup cheddar in a separate bowl.
  5. Punch down dough, divide into 24 pieces; roll each into a ball. Dip in garlic butter, then roll in jalapeño-cheddar mixture.
  6. Layer in a greased Bundt pan, loaf pan, or square pan. Scatter remaining cheddar on top. Cover and let rise for 25 to 35 minutes.
  7. Preheat oven to 375°F. Bake for 25 to 35 minutes until deep golden and internal temperature reaches 195°F.
  8. Cool in pan for 5 to 10 minutes before removing. Serve warm.

Notes

This bread can be made ahead and stored in the fridge or freezer. Reheat in the oven for best texture.
