Jam-Bellied Scones

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 1/2 cup heavy cream
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • Jam of your choice (for filling)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, sugar, baking powder, and salt in a large bowl.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Whisk together the cream, egg, and vanilla extract in another bowl.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined.
  6. Turn the dough out onto a floured surface and knead gently.
  7. Divide the dough into equal portions and shape into rounds.
  8. Make an indent in the center of each round and fill with jam.
  9. Bake for 16 to 19 minutes or until golden brown.
  10. Allow to cool slightly before serving.

Notes
