Keto Cheeseburger Casserole

A delicious and filling casserole that combines the flavors of a cheeseburger while being keto-friendly.

Ingredients

  • 2 lbs extra lean ground beef
  • ¼ cup avocado oil mayonnaise
  • ¼ cup unsweetened ketchup
  • 1 medium onion, finely chopped
  • 1½ cups shredded sharp cheddar cheese (divided)
  • 1 tbsp mustard
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Spray a 2-quart baking dish with olive oil to prevent sticking.
  2. Heat a skillet over medium-high heat and add a little olive oil.
  3. Add chopped onions to the skillet and sauté until they are tender.
  4. Add the ground beef to the skillet with the onions. Cook the beef until browned and drain any excess liquid.
  5. Stir in salt, pepper, minced garlic, ketchup, mayonnaise, mustard, and 1 cup of shredded cheddar cheese. Mix well.
  6. Transfer the mixture to the prepared baking dish and spread it evenly.
  7. Top with the remaining cheddar cheese.
  8. Bake in the preheated oven for about 15 minutes, or until the cheese is melted and bubbly.

Notes

This dish is great for leftovers and can be customized with various toppings and side dishes.
