- 1 tablespoon Lakanto Classic Monk Fruit granules (or keto granulated sweetener)
- 2 tablespoons hot water
- 3/4 cup unsweetened cashew milk (or almond milk, up to 1 cup)
- 3 ice cubes
Instructions
- Combine instant espresso, monk fruit sweetener, and hot water in a medium bowl.
- Whip using a hand mixer, whisk, or milk frother for 3–5 minutes until fluffy and light with firm peaks.
- Add ice to a tall glass and pour in the unsweetened cashew or almond milk, leaving space on top.
- Spoon the whipped coffee mixture over the milk to form a thick, airy layer.
- Stir before drinking or enjoy the layered effect as is.
Notes
Use monk fruit or erythritol for best texture and sweetness. Avoid liquid sweeteners as they won’t whip. Cashew milk is extra creamy, but almond or coconut milk also work great.
