Keto-Friendly Thai Beef Cabbage Casserole

Ingredients

  • 1 lb ground beef
  • 1 head of cabbage, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon soy sauce (or coconut aminos)
  • 1 tablespoon fish sauce
  • 2 teaspoons red curry paste
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Chopped fresh cilantro for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Add the onion and sauté until translucent, about 3-4 minutes.
  4. Add garlic and ginger, cooking for an additional minute until fragrant.
  5. Add ground beef, cooking until browned and no longer pink; drain excess fat.
  6. Stir in red curry paste, soy sauce, fish sauce, salt, and pepper; mix until combined.
  7. In a large baking dish, layer chopped cabbage evenly on the bottom.
  8. Pour beef mixture on top of cabbage, spreading it out evenly.
  9. Cover with foil and bake for 25-30 minutes until the cabbage is tender.
  10. Garnish with chopped cilantro before serving.

Notes

For a complete meal, serve with a side salad or steamed vegetables.
