- 1 lb ground beef or turkey
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 bell peppers, chopped
- 1 can diced tomatoes
- 1 cup cauliflower rice
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or mozzarella)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, cook the ground beef or turkey over medium heat until browned.
- Add the chopped onion and minced garlic, cooking until softened.
- Stir in the chopped bell peppers, diced tomatoes, cauliflower rice, Italian seasoning, salt, and pepper.
- Transfer the mixture to a baking dish and top with shredded cheese.
- Bake for 25-30 minutes, or until the cheese is bubbly and golden.
- Let cool slightly before serving.

Can be stored in an airtight container in the fridge for 3-4 days or frozen for up to 3 months.
