Instructions
- Blend cottage cheese in a small food processor until smooth for the silkiest texture.
- Mix blended cottage cheese with egg in a medium bowl.
- Gradually fold in Kodiak mix until just combined (don’t overmix!).
- Heat pan to medium, use non-stick spray, and cook 2-3 minutes per side.
Notes
Let the batter rest 2-3 minutes before cooking. For extra fluff, blend the entire mixture. Add blueberries, oats, or spices to customize flavor and nutrition.
