- 1 2/3 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1 1/4 cups fresh blueberries
- 1 cup granulated sugar
- 1 Tbsp lemon zest
- 1/2 cup unsalted butter, softened
- 3 large eggs
- 1/2 tsp vanilla extract
- 1/2 cup sour cream
- 2 Tbsp fresh lemon juice
- 3/4 cup powdered sugar (for glaze)
- 1 1/2 Tbsp fresh lemon juice (for glaze)
Instructions
- Preheat the oven to 350°F and grease a loaf pan.
- In a bowl, whisk together the flour, baking powder, and salt.
- Toss blueberries with 1 tablespoon of the flour mixture in a small bowl.
- Cream together sugar, lemon zest, and softened butter in a large mixing bowl until fluffy.
- Add eggs one at a time, mixing well after each addition, then add the vanilla extract.
- Gradually mix in the flour mixture, alternating with sour cream and lemon juice until combined.
- Fold in the blueberries gently with a rubber spatula.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 5 minutes, then invert onto a wire rack to cool completely.
- Whisk together powdered sugar and lemon juice to make the glaze.
- Once cooled, drizzle the glaze over the bread and allow it to set before slicing.
