Lemon Blueberry Bread

Ingredients

  • 1 2/3 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/4 cups fresh blueberries
  • 1 cup granulated sugar
  • 1 Tbsp lemon zest
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1/2 tsp vanilla extract
  • 1/2 cup sour cream
  • 2 Tbsp fresh lemon juice
  • 3/4 cup powdered sugar (for glaze)
  • 1 1/2 Tbsp fresh lemon juice (for glaze)

Instructions

  1. Preheat the oven to 350°F and grease a loaf pan.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. Toss blueberries with 1 tablespoon of the flour mixture in a small bowl.
  4. Cream together sugar, lemon zest, and softened butter in a large mixing bowl until fluffy.
  5. Add eggs one at a time, mixing well after each addition, then add the vanilla extract.
  6. Gradually mix in the flour mixture, alternating with sour cream and lemon juice until combined.
  7. Fold in the blueberries gently with a rubber spatula.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean.
  10. Let cool in the pan for 5 minutes, then invert onto a wire rack to cool completely.
  11. Whisk together powdered sugar and lemon juice to make the glaze.
  12. Once cooled, drizzle the glaze over the bread and allow it to set before slicing.
