Ingredients

  • 1/2 cup cold unsalted butter, cubed
  • 1 egg
  • 1/2 cup heavy cream
  • Zest of 1 lemon
  • 1/4 cup lemon juice
  • 1/2 cup powdered sugar (for glaze)
  • 12 tablespoons lemon juice (for glaze)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix together flour, sugar, baking powder, baking soda, and salt in a large bowl.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Whisk together the egg, cream, lemon zest, and lemon juice in another bowl.
  5. Stir the wet ingredients into the dry ingredients until just combined.
  6. Turn the dough onto a floured surface and pat it into a rectangle about 1 inch thick.
  7. Cut into triangles or circles and place on a baking sheet.
  8. Bake for 18 to 20 minutes, or until lightly golden.
  9. Mix powdered sugar and lemon juice for the glaze until smooth.
  10. Drizzle over warm scones before serving.

Notes

For best results, work with cold butter. You can reduce sugar for a lighter option.
