- 1 tablespoon olive oil
- 1 small yellow onion (diced)
- 1 bell pepper (finely diced)
- 2 cloves garlic (minced)
- 1 tablespoon tomato paste
- 1 ½ cups cooked lentils (or 1 can, drained)
- 1 cup tomato sauce
- 2 tablespoons ketchup
- 1 tablespoon mustard (yellow or Dijon)
- 1 tablespoon soy sauce (or tamari for gluten-free)
- 1 teaspoon smoked paprika
- ½ teaspoon chili powder (optional)
- Salt & pepper (to taste)
- Burger buns or sandwich rolls
- Optional toppings: vegan cheese, pickled onions, sliced avocado, shredded lettuce
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and finely diced bell pepper and cook until softened, about 5–6 minutes. Stir in the minced garlic and cook for 1 more minute until fragrant.
- Stir in the tomato paste, smoked paprika, chili powder (if using), and a pinch of salt. Cook for 2 minutes to deepen the flavor.
- Add the cooked lentils, tomato sauce, ketchup, mustard, and soy sauce to the skillet. Stir well to combine all the ingredients. Let it simmer for 5–7 minutes until the mixture thickens and is heated through. Taste the mixture and adjust the seasoning with more salt and pepper if necessary.
- Spoon the lentil mixture onto toasted burger buns or sandwich rolls. Add toppings if desired.
Notes
Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 3 months.
