Low-Carb Ground Beef Zucchini Bake

Ingredients

  • 1 pound ground beef
  • 2 medium zucchinis, sliced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup marinara sauce (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef along with diced onions and minced garlic. Drain excess fat.
  3. Add sliced zucchinis to the skillet, stir in Italian seasoning, salt, and pepper, and cook for 5 minutes until zucchinis are slightly tender.
  4. If using, add marinara sauce and mix well.
  5. Transfer the mixture to a baking dish and sprinkle shredded cheese on top.
  6. Bake in the preheated oven for about 20-25 minutes or until the cheese is melted and bubbly.
  7. Let it cool slightly before serving.

Notes

This dish can be stored in the refrigerator for 3-4 days or frozen for up to 3 months.
